The growing season is in full swing, and I have a fridge full of zucchini. Anyone have decent recipes?
I've done them grilled and stuffed:
Grilled:
Slice zucchini into 1/4" slices lengthwise
Marinade in garlic, oregano, basil, red pepper flakes, black pepper, coarse salt, white wine and olive oil.
Keep heat low and turn often (you don't want the slices to turn into mush). Baste as they cook.
Stuffed:
Cut zucchini in half, scoop out the seeds leaving about 1/4" of flesh all the way around
Brown ground sausage in a pan, drain grease.
In a separate bowl, mix bread crumbs, shredded mozzarella, parmesan, pepper, basil, oregano, browned sausage, an egg and spaghetti sauce.
Fill zucchini with stuffing, place in pan and top with remaining spaghetti sauce
Cover with foil and cook for 20 minutes @ 400, remove foil and cook for another 20 minutes (depends on the size of your zucchini, mine is huge, so 40 minutes kept the flesh firm). Lots of dick jokes in there, so have at it.
