Easter Dinner - I'm Mailing it In

Unlike Christmas and most other major family gatherings, something about Easter screams "take it easy" to me.

I went to Honeybaked Ham. That's my entire contribution. (good Friday was another story - worked my ass off today with seared scallops with a ginger lime beurre blanc and cilantro remolata).

As far as Sunday, I'm off the hook. My bride is making some potato salad and green bean casserole. We'll have some dippy things for apps - and that's it.

Any Easter traditions celebrated in your homes? Am I the only slacker?

Good Friday is huge down here for crawfish boils. Usually go through a few sacks of crawfish with corn, potatoes, mushrooms, etc.

For Easter we don't go as big, usually throw some burgers or ribs on the grill and call it a weekend.

If this wind would lay down we are spending the day at the beach and I am brining a turkey for grilling in the evening. Then I will watch "King of Kings" on TCM, fulfilling my church obligations for the year.

use to go all out when the gatherings numbered 16 - 20 people. It was the circle of close friends and their guests from Europe. It be an all-out assault on over-indulgence. Appetizers, soup, salads. main course (usually ham, kielbasa, potatoes, corn, etc, etc), dessert and coffee. As the circle grew due to more and more family members immigrating to the various families involved in the circle of friends the festivities and food started to decrease. This year its soup, salad, ham potatoes, kielbasa and dessert.

Locations in the most recent years have varied; my place, mom's, in-laws, cousin's, repeat. This year it's mom's place.

My wife makes a killer brunch for us. Her side of the family comes over for a few hours, then the rest of the day is mine.

Same here. Wife went all-out today with a fine meal since tomorrow will be spent at church and then to the Jake for our first game of the season.

Brother in law made reservations at his country club for their Easter buffet. No prep work, no cooking, no clean up.

Only negative is no leftovers, kinda hard to get that extra prime rib in the wife's purse. Thougth about putting it in the kid's car seat but he's teething now and I wouldn't want my meat marinated w/ a hint of formula
