Ever try soaking the pork in a brine solution? Works really well, especially when you'll be smoking or cooking over low indirect heat. Keeps the meat from drying out. In addition to what's been mentioned, what sounds strange but is actually very tasty is beer can chicken.~Pork tenderloin, marinated in a bottle of Kraft Robusto Italian salad dressing overnight. Then, when grilling over low heat with the lid closed, basted with a mixture of soy sauce and honey.
