Leftover Ham Recipes

I've got about 8 pounds of ham leftover. Here's what I did with some of it yesterday:

Ham Chowder

4 cups of water (add a little chicken bulion for flavor)
Oregano, black pepper, basil, salt

Bring water to a boil, add all ingredients and let cook for about 15 minutes

In a separate skillet, melt a few tablespoons of butter. Add about a cup of milk (I added a little at a time to check consistency). Slowly stir in about a half cup of flour and a half cup of shredded cheddar cheese. Keep the heat low, and stir to prevent sticking and burning.

Add a can of cream style corn and ham cubes, along with the contnents of the skillet, to the pot of boiling veggies. Reduce heat and stir frequently. I let it simmer for about 15 more minutes. .

Nice- I just copied, pasted, and printed for tonight.

Last night, we did the basic Ham, black beans and rice. I could eat that every day.
Saute onions, garlic. Add black beans, diced tomatoes, small ham pieces. Simmer; mix in lime juice.
I add cayenne pepper to taste.
Serve over rice.

Jesus - those both sound good.

I love taking leftover ham and sauteeing it with some egg, peas, onions, olive oil ... then tossing it with some cooked noodles and topping it with grated parmesan and crushed red pepper.
