I am going to give this a try. Any tips to make sure it turns out correct?
Did you use fresh chorizo. I unfortunatly only found some smoked chorizo at the store. I grabbed some fresh dutch sausage as a possible substitute. I was going nuts trying to find the manchego cheese. I did eventually find the only chunk of it in the store.

I think this is the recipe we use. Taste the cream/chipotle before putting it all together with the sweet potatoes. I think we may have used twice the chipotle called for to give it a little more kick. It's mighty tasty.
