My mouth is watering. One suggestion, based on personal preference. I'm not a cheese and seafood guy, so I would consider a simple mango salsa - diced ripe mango, diced red onion, chopped cilantro, and depending on the heat, some diced jalepeno. Mix with a little olive oil and a squeeze of lime. Season to taste with salt.
