I've got about 8 pounds of ham leftover. Here's what I did with some of it yesterday:
Ham Chowder
4 cups of water (add a little chicken bulion for flavor)
Carrots
Potatos
Onions
Celery
Oregano, black pepper, basil, salt
Bring water to a boil, add all ingredients and let cook for about 15 minutes
In a separate skillet, melt a few tablespoons of butter. Add about a cup of milk (I added a little at a time to check consistency). Slowly stir in about a half cup of flour and a half cup of shredded cheddar cheese. Keep the heat low, and stir to prevent sticking and burning.
Add a can of cream style corn and ham cubes, along with the contnents of the skillet, to the pot of boiling veggies. Reduce heat and stir frequently. I let it simmer for about 15 more minutes. .
